Harira




Ingrédients:
  • 250 grams of beef cut into small pieces. 
  • 2 or 3 Bone Marrow. 
  • 2 onions, chopped. 
  • 200 g chickpeas, soaked overnight, skinless. 
  • 1/2 packet of saffron. 
  • 2 liters of water. 100 grams of lentils soaked 2 hours in advance.
  • 1 cup of the rice. 
  • 4 tomatoes passed through a food mill. 
  • 3 tablespoons of tomato paste. 
  • 1 bunch parsley, coriander finely chopped 
  • 1 stalk celery, chopped fine. 
  • 50 grams white flour. Salt and pepper.

    préparation:

    - In a pot, stir and cook over medium heat for 20 minutes, meat, bone marrow, onions, chickpeas, saffron and water. Salt and Pepper.


    - After this time, add the lentils, rice, tomatoes, tomato paste, parsley, celery and coriander.
     
    - Cook for 20 minutes, then add the flour diluted in a glass of water while stirring continuously (do not lumps).



    - Stir with a spatula occasionally for 5 to 10 minutes and serve hot with dates or honey cakes.

     

    For: 6 people.
    Preparation time: 20 min.
    Cooking time: 50 minutes.
