Sea bass with raisins


1 sea bass 2 to 3 kg.


The chip, the Empty, wash with brine and dry. Bake 10 minutes in salted boiling water

200 grams of well-washed rice, 100 grams of seedless raisins, washed well



Drain and mix thoroughly with:

1 teaspoon ginger, 1 teaspoon pepper, 1 packet of saffron salt to taste 25 grams of butter

Meanwhile, cook in 1 cup of salt water

500 grams of chopped onions, 150 grams of seedless raisins

After 15 minutes of cooking, add:

1 teaspoon cinnamon, 25 grams of butter, 2 tablespoons sugar

And caramelize, stirring occasionally.
Place fish in a serving dish and cover completely the caramelized sauce.
