Couscous with vegetables

ingredients :

  •  1 large zucchini 
  •  1 red pepper 
  •  1 yellow pepper 
  •  4 carrots 
  •  350 g chickpeas 
  •  1 large onion 
  •  3 cups tomato puree 
  •  1/2 cube couscous 
  •  soy sauce
  •  2 cups semolina 
  •  2 glasses of water
  •   40 g butter 
  •   4 pinches of salt


preparation :

  1. Cut the carrots into slices and expand onion into small pieces. 
  2. Cook carrots with onion, half cube for couscous, tomato paste and about 1 glass of water. Add a dash of soy sauce. Stir and cover. 
  3. Cut into peppers, zucchini and add once the tender carrots. Also add the chickpeas. 
  4. Let simmer for about 30 minutes, stirring occasionally to prevent sticking to the preparation bottom. 
  5. Ten minutes before sitting down to eat, make the couscous. Put the butter, salt in a tupperware lid, pour two cups of boiling water over it. Mix in the butter melts then add the semolina. Mix well to obtain a homogeneous mixture and cover rapidly for 5 minutes. 
  6. After these 5 minutes grainer meal with a fork and let the breath 1-2 minutes, then cover until to eat.



     For 4 people:
     Preparation time: 20 minutes
     Cooking time: 30 minutes
     Waiting: 0 min
     Total time: 50 minutes
