- 4 cod fillet portion (between 100 and 200 g each)
- 2 shallots
- 2 tablespoons breadcrumbs
- 2 tablespoons grated Parmesan cheese
- 20 cl coconut milk
- Olive oil
- Salt and curry
preparation:
Preheat oven to 210 ° (gas mark 7).
Peel and chop the shallots and spread in a baking dish by coating two tablespoons of olive oil.
Placing in the oven until prepare the remaining ingredients.
Pour the coconut milk in a bowl.
The salt and add a teaspoon of curry powder. Mix.
In another bowl, mix the breadcrumbs and grated parmesan.
When the oven reaches temperature, remove the four cod fillet in the pan where the onions and cover with coconut milk.
Sprinkle crumb mixture / parmesan and bake for 15 to 20 minutes. The length of cooking depends on the thickness of the back of cod.
Finally ... Cod can be replaced by other fish and / or nets, coconut milk with almond milk or cream kind.
