Zucchini Fritters

ingredients:

  •   1 zucchini 
  •  200 g flour 
  •  baking powder 
  •  2 eggs (I've put 3)
  •  1 tablespoon olive oil 
  • 10 cl sunflower oil 
  •  salt and pepper

Preparation:


  1. Grate (grid with large holes) zucchini without peeling. In a bowl, mix the eggs with the flour,  olive oil. Salt and pepper. Add the zucchini and mix. 
  2. Heat the sunflower oil over medium heat in a large nonstick skillet. Slide dough zucchini in hot oil, tablespoon by tablespoon, spacing them enough. 
  3. Let nicely browned donuts few minutes on each side, turning often, then drain on paper towels. Enjoy them immediately, they do not warm up.

     For 4 people:
     Preparation time: 10 minutes
     Cooking time: 10 minutes
     Waiting: 0 min
     Total time: 20 minutes
