delicious sole with parsley

To remove the skin of 2 kilograms of soles, chosen medium, wash dry quickly and salt to taste.

When serving, fry on both sides 3 minutes in 100 grams of butter, put them in a nice serving dish, then prepare the following sauce:



1 large bunch of parsley, chopped fine, 2 cloves crushed garlic, 1 teaspoon cumin, 1/2 teaspoon salt, 2 tablespoons lemon juice

Sauté 5 minutes in a pan, stirring often, with the remaining butter for frying fish.

Coat your fish with this very hot sauce and serve immediately.
