Ingredients :
- 1 kg lamb
- 3 red onions
- 3 potatoes
- 2 carrots
- 2 turnips
- 2 tomatoes
- 2 courgettes
- 1 teaspoon coffee ginger
- 1 teaspoon pepper
- 1 dose of saffron
- bark of 2 lemons
- a drizzle of olive oil
- candied green olive
- salt and pepper
Preparation of Berber tagine :
To prepare the Berber tagine recipe :
- In a tagine , brown the pieces of meat in a little olive oil with finely chopped onion. Season with pepper , pepper, ginger, saffron and salt. Sprinkle with water and cook 45 minutes .
- Meanwhile wash the vegetables , peel . Cut the onions , potatoes in lengthwise , zucchini into quarters lengthwise, carrots and turnips.
- Arrange the vegetables domed on the meat , sprinkle with the olive oil and cook for 30 minutes net to fire very sweet .
- Serve hot in the tagine dish .
