how to prepare a Cream of carrot coconut

ingredients:

  •  1 kg of carrots (6 large carrots) 
  •  1 orange 
  •  1 can coconut milk (do not use a coconut or shredded coconut). 
  •   salt and pepper

Preparation :

  1. Grate the carrots (to cook faster) and throw in your favorite pot. 
  2. Squeeze orange and pour the juice into the pot and box of coconut milk. 
  3. Add water until you pass a finger at least the level of carrots (adding boiling water, it still gets a few minutes of cooking). A little salt and pepper and cook over high heat for 1/2 hour. 
  4. Then taste the soup to adjust salt and pepper to taste. 
  5. Mix everything to get a velvety ... down with a little water and remix if the soup is too mushy.

     For 6 people
     Preparation time: 5 minutes
     Cooking time: 30 minutes
     Waiting: 0 min
     Total time: 35 minutes
