ingredients:
- 300 grams of green parsley spaghetti
- 2 large zucchini
- 1/2 clove of garlic
- a few fresh mint leaves
- 5 centiliter of olive oil
- 1 teaspoon grated Parmesan cheese
- 2 tablespoons hazelnuts
- salt and pepper
Preparation:
- Cook the spaghetti in boiling water for 10 minutes.
- Meanwhile, grate the zucchini green part for spaghetti. Sauté the strips with olive oil for a few minutes in a pan with the garlic finely chopped.
- Drain the pasta and divide among plates with strips of zucchini and garlic. Add salt and pepper to taste, add the Parmesan and chopped hazelnuts, and decorate with fresh mint. Serve hot.
